It could have been worse!

I put on 1.5lb which after 2 weeks away from group and the numerous events that have been going on isn't too bad going!

However...........this Saturday I go away to the South of France for a week....hhhmm I'll analyse that one later.

Today is an extra easy day.

Breakfast: Mushroom omlette with baked beans.

Lunch: Super speed soup!!!

Snacks: Activia fat free yogurts and bananas

Dinner.................is out again. Will make a better choice than last time!

Red Day...and my first weigh in in 3 weeks!

So yesterday was a disaster. Lunch was tapas so everyone ordered 10 dishes to share which meant I couldn't chose just the chicken or fish for myself. I did however take some inspiration for a dish I'd like to try to recreate, chickpea spinach and ricotta (2 syns per 25g) 'meatballs' in a tomato sauce....watch out for that one!

Then there were brownies in the office in the afternoon which I for some reason couldn't resist (although that was very a small brownie!) So by the time I got to dinner for a friend's birthday I just ordered what I wanted which was the Cheese Souffle, which came with a lovely SW friendly side salad if that makes any difference.

Sometimes life gets in the way and like with lunch yesterday it's impossible to make the best choice, but I just have to make sure that is only 10-20% of the time and the other 80% is perfect, I think that will be the key to maintaining.

I am nervous about weigh in because I've missed the last 2 because of work/social events and I'm sure I've put on a couple of lbs. I just want to stay within my target 'allowance' if you will.

Today is a red day:

Breakfast: 42g crunchy bran (healthy extra b) with banana and activia strawberry yogurt.

Lunch: Ham sandwich (2 x wholmeal bread being my second healthy extra b) with lettuce and 1tbsp wholegrain mustard (2 syns)

Slimming World BLT

For breakfast I had a classic BLT with an added fried egg using my healthy extra b for the bread and a tbsp of tomato ketchup (1 syn) and a tbsp of lighter than light Mayo (0.5 syn).



I've got a work lunch today and then a friend's birthday for dinner so all I can do is make the best choice from what's on the menu! I'll update you later as to what that is.

Slimming World Peppers stuffed with mackerel, mushrooms and cheese!

Really nice dinner of roasted pepers stuffed with fried mushrooms and mackerel in tomato sauce topped with melted cheese (42g being a healthy extra a).

Followed this with a banana and custard muller yogurt (1 syns) for dessert.

Extra Easy Day

Breakfast is my french toast sandwich with bacon, banana and a drizzle of honey (1 tbsp is 2.5 syns) the wholemeal break is my healthy extra b. If you guys haven't tried this yet please do, it's so good!
Lunch is left over pasta from last night's dinner.

Snacks the ever trusty bananas and yogurts!

Mushroom and Bacon Pasta with Roasted Tomato and Basil Sauce

Today was spent horribly hungover but I managed to stick to the plan 100%.

I finished off the pasta I made yesterday for lunch and then created a new pasta wonder for dinner!

To make the sauce: Chop an onion and roast in the oven for half an hour alongside a big pack of cherry tomatoes and 2 cloves of garlic (ensure all is coated well with fry light). Then blend with a generous handful of basil leaves and 50ml of chicken stock and season well.

Fry up some mushrooms and bacon (all visible fat removed) and mix in the cooked pasta and sauce.


I followed this with a hifi bar (Healthy extra b) and will have an options (1.5 syns)

Make Do Slimming World Pasta

I had to be somewhere early this morning and I wasn't hungry when I woke up (shocking for me!) So I decided to skip breakfast and have a nice big brunch/lunch when I got back, and boy did I!

I decided to have pasta which is a great way to use up whatever is in the fridge. I roasted some pepers and tomatoes and mixed this in with the cooked pasta along with wilted spinach, sweetcorn, tuna and low fat cottage cheese.


And the best part of a meal like this is that there is plenty left over for another time!

Snack A Jacks Syns

I went to the cinema again this evening and wanted something to snack on so I picked up Snack A Jack's Sour Cream & Chive mini bites, which are 5.5 syns and I think worth them.


I really want some chocolate so I'll have an options (1.5 syns) so 7 syns altogether today!

Slimming World Chips for dinner

I had my favourite green dinner tonight, home made slimming world chips with mushy peas, baked beans and fried eggs, I've yet to find a plate big enough to fit it all comfortbaly.


Followed this with an activia rapberry yogurt which is much thicker and creamier than mullers.

Green Day

I'm not going to buy anything for dinner tonight so will have to have whatever is in the cupboard and I always find that is easier to do when I have a green day.

For breakfast I had 42g crunchy bran (Healthy extra b) with 150ml of milk, out of my 250ml allowance (healthy extra a) with a chopped up banana.

Lunch is my 5 x scan bran (healthy extra b) with 4 x light laughing cow triangles (healthy extra a) with tomato.

Snacks are yogurts and bananas.

King Prawn Stir Fry

I went to the cinema after work and grabbed some Mexican Chicken from Marks and Spencer's which is 1 syn a pack to snack on. I did have a couple of handfuls of popcorn but nothing outrageous!

Then when I got home i had a small plate of King Prawn Stir fry followed by a muller yogurt.

Red Day

Last night was a disaster.......worked the whole night and the only thing available to eat were sugary goods.........cupcakes to be precise. But that is no excuse, I should have said no and held out until I got home and is what I will do next time!

So today is a fresh day and will be a red day. Brekfast was a wholemeal roll (healthy extra b) with bacon egg and tomato.


Lunch is 5 x scan bran with 4 x light laughing cow triangles with cucumber.

Snacks are banana and cucumber and dinner is planned to be left over carrot and corriander soup!

Slimming World Cous Cous for lunch

Today is another wild card, I have a work event tonight where there will lots of champagne and canapes so I'll just have to be as good as I can. But until then I have decided to have a green day.

For breakfast I've had 2 poached eggs with mushrooms and baked beans on 2 x wholemeal pieces of toast (healthy extra b)

For lunch I've made plain cous cous, mixed with roasted pepers, sweetcorn, cherry tomatoes, corriander and a squeeze of fresh lemon juice.

Slimming World Carrot and Corriander Soup

For dinner I had home made carrot and corriander soup topped with fresh corriander and fat free fromage frais with a wholemeal roll (healthy extra b).

To make the soup boil carrots and a tsp of ground corriander in enough veg stock to cover the carrots, season with salt and peper. Once the carrots are soft, let cool and then transfer to a food procesor, add a handful of fresh corriander and blend, if too thick add more water or vegetable stock.


This was followed by a banana mixed with frozen berries and a muller toffee fat free yogurt, and then I had about 3 syns worth of trifel with a chocolate orange options, 1.5 syns.

Slimming World Trifle

This beautiful trifle is 10.5 syns for the whole lot.......amazing.



Lay 5 lady fingers (5 syns) out in a glass dish, then make up any flavour hartley's sugar free jelly with water (1.5 syns per sachet) and add loads of fresh fruit like raspberries and strawberries, place in the fridge until set. Then layer a pot of reduced fat ambrosia custard (4.5 syns) on top of the set jelly, and then layer total 0% fat natural yougut (mixed with canderel to make it taste like double cream!) on top of the custard........finish with sprinkles or any other decoration!

Craving beans!

Relly craved baked beans this morning so I've decided to have a green day. I had a great mushroom omlette with baked beans for breakfast and have packed my scan bran (healthy extra b) away for lunch with cucumber and 4 x laughing cow light triangle (healthy extra a).

I plan on having the carrot and corriander soup for dinner so will have my other healthy extra b as a roll with that or a hifi bar with a cuppa.

Cannelloni with cottage cheese and spinach

Nice dinner of cannelloni stuffed with light cottage cheese and spinach, topped with pasasta mixed with onion garlic and chilli and melted cheese!


Today's snacks have been a lot of muller fat free yogurts with frozen fruits.

Cheese Scones!

I read this recipe on my consultant's facebook page ages ago and have been meaning to try it ever since and finally got round to it today.

Mix together 1 pack of instant mash (free) 1 tub of fat free/light cottage cheese (I used Tesco's lighter chive and onion cottage cheese) 3 medium size eggs and season......that easy. It should have a pastry kind of consistency but add a little bit of water if necessary to make it bind a bit better, season with salt and pepper. Mould this mixture into 6 large scones and bake in the oven on a medium heat for about 20 minutes or until golden (as you can see in the picture I tend to chargrill my food!)



These were great,I can imagine they would be amazing with baked beans and a poached egg. I had them on their own with some tomato sauce which strangly made them taste like a cornish pasty! (I've got grand plans to add mince meat and onion to try and make a cornish pasty at some point).

Now however great these were they may technically count as a tweak which means they could contain syns...'tweaks' are when free food may not be free because it isn't being eaten in the form it should be, so for example, the instant mash should be made up as mash and not used as a flour substitute. However, the general rule with 'tweaks' is as long as you're still losing weight, don't worry, it's only when your weight loss slow down you should re think them.

I definitely reccomend giving these a go, delicious!

Go Banana's.........and bacon

I really wanted something different for breakfast and I remembered how much I loved French toast when I lived in America.

French toast (bread dipped in egg and fried) is usually served with fresh fruit and some kind of syrup....and bacon! Eggy bread, fruit, syrup and bacon may sound weird but it works!

So I turned my version of french toast into a sandwich. Dip two slices of wholemeal bread (healthy extra b) into egg and fry in fry light until golden, grill 2 pieces of bacon (fat cut off) and place on the bread with chopped banana and 1 tbsp of honey (2.5 syns)....do not knock this until you have tried it!

Great Red Dinner.......avec half a bottle of wine

I had a delicious dinner of baked salmon with a side of spinach and pak choi cooked in chili, ginger, garlic, soy sauce and crumbled chicken oxo cube, topped with some mussels. 


Dessert was a toffee muller yogurt with frozen fruit and a banana, and then I was still hungry so I had a coconut muller yogurt.

I really wanted a nice relaxing drink after work today so I shared a bottle of wine with ma mere, it was nice and definitely worth the 14 syns.

I'm currently about to go and read my book with an orange options.......1.5 syns.

Could have made a better choice!

So lunch........my boss pulled over at Marks and Spencers and said let's grab something here. So I headed for the salads thinking this would be the best bet and I decided on the super wholefood salad, cous cous, with loads of veg.and a pot of lemon vinaigrette, I just looked it up on the SW website........12 syns!!! I couldn't believe it, although I didn't have the vinaigrette so I'm hoping without that it would be at the most 8.
Oh well c'est la vie, I looked at their other salads and the best options would be their count on us range which vary between 2-6 syns (that's the salads not the sandwiches which are much higher) Here are some examples:

Count on us Vietnamese Chicken pot - 2 syns
Count on us Tuna layered Pasta salad - 4.5 syns
Count on us Pasta Salad with Mozerella and sweet plum tomatoes - 3 syns
Count on us King Prawn and pasta salad with lemon and basil mayo - 3 syns
Count on us Chicken Tikka Salad with rice - 4 syns
Count on us Mexican Bean and Salad - 5.5 syns

And then I found this gem:

Eat Well Sweet Sweet Chilli Prawn/Mango Salad Wraps with a sweet chilli dip - 1 syn!

For dinner I had Pasta mixed with bacon, cherry tomatoes, spinach, button mushrooms, fromage frais and chilli.......lovely.


Finished this evening with a mint options (1.5 syns) and a toffee muller yogurt.

Uncertain day ahead...

So last night was silly but I was at the theatre which isn't an event that happens every week so I can get over it. But I must be good from here on out, this is what happens when you miss group.....you get into the mind set of a school girl and think you can get away with something because the teacher isn't looking! But I'm going to the South of France in just over 2 weeks so I have to be good until then because of course I'll treat myself out there, and that will be worth it, but I want to go out there bang on target so I can't afford silly indulgences now that aren't worth it. I've 3 social events in the next two weeks (one of which will mean I have to miss group again next week) but that's 3 events out of 42 meals, I can handle that.

This morning I had an egg and tomato sandwich (healthy extra b) which was delicious, followed by a strawberry muller yogurt.

I'm leaving work at 10am today for a meeting which starts at 12 and I probably won't be back in the office until at the earliest 3pm.....I've no idea where lunch will fit in here and I may have to go slightly off track if lunch is provided but that's life, I can't control that. So hopefully I'll just grab a jacket potato and beans once I'm back in the office or snack on my bananas and yogurt until I get home.

Breafast was poached egg on 2 x wholemal pieces of toast (healthy extra b) with beaked beans. And Lunch is left over spag bol. I'm at the theatre tonight so not sure what dinner will be but I'll be sure to stock up on free snacks so I'm not too ravenous!

Another green day

This morning I was starving so had a huge breakfast of quorn sausages (these were frozen ones before they rebranded and they became syns so are free) grilled tomatoes, scrambled egg, baked beans and mushrooms, with 1 tbsp of tomato ketchup (1 syn)........filled me up nicely!



For lunch I had 5 x scan bran with 4 x light laughing cow triangle and cucumber. I had 1 piece of turkish delight that was in the kitchen that I worked out was 1.5 syns.

For dinner I had spaghetti with butternut squash sauce, make the sauce by roasting butternut squash and 1 clove of garlic, blend once roasted with 100ml of chicken stock and 3 heaped tbsp of fat free fromage frais, season with salt and peper.


I've got a healthy extra b left so am going to have a hifi bar with a cup of tea, or an options which would take my syns for today to 4.

Green day

I really wanted cereal this morning and to have scan bran for lunch, and I'll be home late tonight so need a quick dinner.......so I decided on a green day which will give me 2 healthy extra's a and b and means I'll be able to make a quick rice tonight not having to worry about getting that third super free food in there.

I had 42g crunchy bran mixed with a banana and strawberry muller yogurt for breakfast


I've packed 5 x scan bran away for lunch with 4 x light laughing cow triangles (healthy extra a) and cucumber. I'll be snacking on bananas and yogurt.

Success getting back on the horse.

There's nothing that reminds you how great slimming world is than when you cook up an amazing fry up for breakfast, all be in fried in fry light. I love it when people who don't know much about slimming world look at my plate and can't understand how I could possibly eat everything that is on it, and have even more if I liked, and be 2 stone 8 lbs lighter than when I was probably eating less.

Here's my breakfast!



I went shopping for most of today so snacked on grapes and carrot sticks when I was out and grabbed some super noodles mixed with sweetcorn when I got home.

For dinner, I made a morrocan chicken dish with a side of rice and a lentil stew. For the lentils I fried some onion garlic and carrots, added puy lentils and chicken stock and then simmered until the stock has been absorbed, at the end I added some cherry tomatoes and spinach and cooked for a further 2 minutes. For the chicken I just seasoned it in Morrocan spices and fried.



Dessert was a banana and custard muller yogurt........now 1 syns.....darn that new muller formula that has managed to add 1 syn but taste exactly the same!

Just snuck a kitkat.....5.5 syns.

Derailed

Woke up with the most horrendous hangover (so clearly far too many syns were drunk last night) and couldn't even think about food, then when I could all I wanted was a huge bowl of cereal so that's exactly what I had. Then I had a bacon sandwich...........and the I went to Pizza express and then to the cinema where I shared a large popcorn......on the bright side we failed to finish the popcorn. I've finished my naughty day with a kit kat and tommorrow is another day that will be slimming world perfect. Every now and again I'll have these days but the important thing is to not let it roll into the next day and get back on the slimming world horse......giddy up.

Extra Easy Day!

So the best part of my curry last night was the fact that for one butternut squash and 1 sweet potato suprisingly made a huge amount, so plenty wa sleft over for lunch! I've packed it away with some rice.

For breakfast I had 2 x poached egg on 2 slices of a small wholemeal loaf (healthy extra b) with a side of baked beans and mushrooms.


I'm having friends over for dinner tonight so plan on making the lamb and vegetable biryani, always a crowd pleaser (well...........it is when my mother makes it)

Quick Curry

I made a really quick butternut squash and sweet potato curry and it was great - recipe below serves 4)

Cut half a butternut squash and 1 sweet potato into cubes and an onion into large chunks. Fry the onion in 4 tbsp of curry powder (use hot/medium/or mild according to your taste) for 5 minutes. Then add the butternut squash, sweet potato and 1 tin of chopped tomatoes, simmer for 5 minutes. Then add 100ml of reduced fat coconut milk (10 syns so 2.5 syns per serving) and some garden peas. Cover and simmer until the butternut squash and sweet potato is tender.

I had mine with basmati rice garnished with fresh corriander.


I still have 1 healthy extra b left so I think I'll have a cup of tea with a hifi bar.... or the curly wurly I sneakily bought at lunch time (6 syns).....lovely jubbly.

Target and Teriyaki Chicken!

Woohoo I stayed at target! Not 1lb on or off. I'm missing group for the next 2 weeks so I will need my blog now more than ever to keep me on track.

I came home to an amazing dinner of teriyaki chicken and vegetable stir fry. The recipe below serves 4.

Marinate 4 chicken breasts in 2 tbsp of dark soy sauce for a couple of hours kept in the fridge (not necessary to marinate but it does improve the flavour and makes the chicken more tender)

Stir fry the chicken for 2-3 minutes; chop 2 carrots into matchsticks, 1 red pepper into thin strips and half 100g mangtout lengthways - add the veg to the chicken and stir fry for another 3-4 minutes. Pour in 100ml teriyaki sauce (8 syns - so 2 syns per serving) and serve piping hot.

The teriyaki sauce makes this dish and to be honest you probably don't need 100ml so you could make it even lower in syns!

I served mine with a spide of wilted spinach in dark soy sauce with chili, ginger, garlic and a crumbled chicken oxo cube.



I followed this with a coconut muller yogurt and then a cup of tea with a kit kat (5.5 syns).

My first weigh in as a target member!

I'm suprisingly nervous about this! I'd of had to of put 4lb on in a week to not be within my target range this week which I very much hope I haven't! But this is my first weigh in where I haven't got to lose weight, a very strange feeling.

I'm having a red day today, breakfast was 42g of all bran mixed with a muller strawberry yogurt, a banana and frozen berries. Lunch is a ham salad sandwich with 1 tbsp of light salad cream (1.5 syns) and plans for dinner is teriyaki chicken!

Lunch out...cancelled!

SO I had to find a SW friendly lunch yesterday and when in doubt.......turn to the trusty jacket potao and beans, classic.

For dinner I had a chilli lemon chicken which was divine with butternut squash, spinach, broccoli and rice. I'll post the recipe later.


I followed this with the new muller coconut light yogurt with sprinkled chocolate, it was so good, and I think you could do a lot with it in recipes. And of course my usual options, mint flavour which is 2 syns.

Quick Dinner

I'm always home late on a Monday so need a super quick dinner, tonight I stuffed a pepper with mackeral in spicy tomato sauce top with 42g half fat cheese (healthy extra a). I followed this by a muller toffee light yogurt mixed with banana and frozen berries.

Earlier today I bought a count on us spiced rhubarb yogurt from Marks and Spencers, if you want a new creamy free yogurt, try this one.

Red day!

Woke up to the smell of my sister making a bacon sandwich and once you've smelt bacon it's difficult to want anything else. So I had a bacon egg and tomato sandwich (1 healthy extra b) with 1 tbsp of tomato ketchup (1 syn).




I baked a tuna and vegetable quiche yesterday so have packed that away for lunch with spinach, cherry tomatoes and beetroot. Snacks will be banana and yogurt, and my other healthy extra b, a hi-fi bar.
