Slimming World Cannelloni

Dinner was Cannelloni stuffed with spinach and low fat cottage cheese, toped with home made tomato and basil sauce topped with low fat cheese! I served with a side of rocked and garlic mushrooms.


Because my dinner meant I've had a green day I had my second healthy exta b as a Kellogs Fibre Plus bar (these are great if you haven't tried them).

Dessert was an activia vanilla yogurt followed by a chocolate brownie options (3 syns). This took my syns to 7.5 syns for the day.

Fresh Week

So I put on 2.5lb.....which was completely desserved by the amount of fromage and crossaints consumed in France. The good news is that I'm still in target....just! The bad news is I had a bit of a Wednesday night blow out so must put that to one side and start a wonderful slimming world week. I have 2 dinner parties this week which will be the only hurdles but I'll cross those when I come to them, the main thing is to not write the week off because of a hurdle........my consultant always says to imagine your week like a bunch of roses, you wouldn't throw the whole bunch out because of 2 bad flowers.

So for breakfast I had 28g porridge oats (healthy extra b) cooked in a mixture of water and milk (to ensure I don't go over my heealthy extra a of 250ml of semi skimmed milk, mixed with 28g sultanas (4 syns) and banana, sweetened with canderel. I also had a red grapefruit.



For lunch I made up Ainsley Harriet's Spice Sensation Cous Cous (1 syn) mixed with peppers, tomatoes and sugar snap peas.



Depending on what I have for dinner today will either be a extra easy of a green day.

Slimming World Fish Dinner

Loads of veg and onion chopped up and fried with fish such as cod in a tomato sauce served with butternut squash, broccoli and carrots. To add extra flavour to the fish add chorizio (4.5 syns for 50g).


For dessert I had an activia fat free yogurt and a curly wurly (5.5 syns) And I may have a options later (1.5 syns) 8 syns for the day.

Slimming World Smoked Ham Salad (Red Day)

After my humongous dinner quite late last night I wasn't hungry this morning so have packed up 42 grams of crunchy bran (healthy extra b) with muller yogurt bananas and grapes to have at work.

For lunch I've made a smoked ham salad with 2 tbsp of lighter than light mayo (1 syn) Just mix up lettuce, tomatoes, cucumber and peppers. I've packed up 3 scan brans (5 being a healthy extra b) as well because I always find salad, despite however tasty, never really fills me up.

Slimming World Chilli Burgers with Egg, caramalised onion and chips!

Make the burgers by mixing fresh chilli with extra lean mince meat and grill until cooked.........that simple!
Caramalise the onion by frying (in fry light) red onion with balsamic vinegar and canderel (change amount on how sweet you like it)....that simple!
Make the chips by cutting up a potato and placing on a baking tray sprayed with fry light and then spraying the chips again with fry light adding some salt, cook until golden....that simple!
Fry and egg......that simple!

I had mine with 2 tbsp of tomato ketchup taking my syn value for the day to 3.

For dessert I had some grapes.

Slimming World Big Breakfast

Huge Extra Easy breakfast today of scrambled egg, baked beans, grilled tomatoes and bacon, and mushrooms.


My lunch is 5 scan bran (healthy extra b) with tuna mayo (1 syn for 2 tbsp of lighter than light mayo) and cucumber. Snacks will be banana and free yogurts.

Slimming World Linguine Carbonara

For Lunch I had 3 scan brans (5 is a healthy extra b) topped with tuna mayo sweetcorn and cucumber (1 syn for 2 level tbsp of lighter than light mayo)


Dinner was a delicious linguine carbonara. Cook the linguine and put to one side saving half a mug worth of the water it was cooked in. Then mix 2 eggs, 28g parmesan (6 syns - so 2 syns each if this is serving 4) and season with salt and peper gradually adding the half mug of water mentioned earlier. Fry bacon and ham and put to one side. Then fry 3 garlic cloves 1 onion, and 10 mushrooms, gradually adding 200ml of chicken stock until most of it is absorbed. Finally add the bacon ham and pasta to the mushrooms garlic and onion mix and then the egg mixture. Ensure all the pasta is coated and cook for one minute. Served with a sprinkling of parsely, parmesan and side salad.




I also had a sneaky gin with dinner for say 3 syns for that.

I had a vanilla muller yogurt for dessert and will have an organe options in a bit (1.5 syns) that will take me up to 7.5 syns for the whole day.

I'm back from the South of France!

And the less said about what was eaten there the better! All I can say is that I bloody enjoyed it but cannot wait to get back on Slimming World, I missed beijng in control of my food and knowing that what I was eating was healthy. Let's just hope I haven't gone over the 3lb of my target! We'll find out on Wednesday.
So today I've had scrambled egg and baked beans and some left over chicken curry (home made slimming world curry of course). I'll check in with dinner later!
